Intro Blog-Health 102

Hello everyone. For my health challenge this semester I have decided to focus on making better food choices. I’ve been a relatively healthy eater for most of my life, but in the last 2 years it’s been a real problem. In the past I’ve mostly eaten a pescatarian diet. For those of you who don’t know, that means no meat except fish; with lots of veggies; fruits and whole grains .

Unfortunately, the past 2 years have kind of kicked my butt. I had some losses in my family and ended up becoming a full time care giver for about a year. My mom, who I was taking care of, was a real meat and potatoes kind of person and she never met a vegetable she didn’t hate. That combined with the stress of it all made keeping up my healthy habits pretty close to impossible.

Since then I’ve had a hard time getting back on track and I’ve been letting my cravings for junk food get the better of me. I’m hoping this class project will help jump start me in the right direction. I don’t want to go on a “diet” because I don’t think that really leads to long term success. Plus, weight loss isn’t the most important thing for me. Granted, if I lose a few pounds along the way I definitely won’t be complaining.

That being said, my primarily goals are:

1) Move away from the sodas and sugary treats.

2) Focus on more home cooked meals vs. processed food with ingredient labels that look like something out of a lab.

3) Eat foods closer to how they are found in nature.

The main challenge I see in this is the prep time involved. Having healthy options available when you need them means lots of planning ahead. This I think will be the most difficult part. Wish me luck. I’ll look forward to seeing what everyone else is planning.
