Week 2 – Some Bumps in the Road

So week two was a little more challenging. It started out with my fur baby getting really sick. I spent several days looking after her and staying close by. I was happy to do it. She’s way more important to me than maintaining any dietary goal. However, it did mean no trip to the grocery store, which meant minimal cooking and planning ahead with healthy food options.

That said, I still managed to meet MOST of my stated goals. I was able to get in my daily vegetable and fruit and minimal junk food. Still, I know some of my food choices weren’t the best. I managed to do one food counter that really helped me throughout the week. Here it is:

Started with sweet potatoes and beets
Used a mandoline slicer to cut thin even slices

Put them in a dehydrator (you can also use the oven on the lowest setting) for several hours
Ended up with a big bag of homemade, healthy chips

My main problem this week was that I wasn’t able to restructure my environment in order to set myself up for success. Of course I knew this was important, but this week really brought the point home. I gained back 1 lb. It was a bummer, but I tried to focus on what’s important.

Meanwhile, this week’s chapter on psychological health came at a perfect time. I tried to implement Seligman’s principle of learned optimism and kill the negative self-talk. Next week is a new opportunity to start again and really, I didn’t do that bad considering.

BTW, Angie’s feeling much better so all is good.
